- 8 oz (250g) elbow macaroni
- 1 pound (450g) ground beef
- 2 cup (475 ml) beef broth
- 14 oz can (400g) red kidney beans
- 1 tbsp olive oil
- 1 onion
- 1 green pepper
- 4 garlic cloves
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp paprika
- 1 tbsp tomato paste
- 1 cup (210g) crushed tomatoes
- 1 cup (210g) tomato puree
- 1 cup (225g) cheddar Cheese
- 1 cup (225g) mozzarella cheese
- Fresh cilantro
- Salt and pepper to taste
Instructions
- In a large skillet over medium-high heat, heat the olive oil, add the ground beef and cook until the meat has browned.
- Add the onion, green pepper and garlic to the skillet and cook 2-3 minutes, until vegetables have softened. Add in cumin, chili powder, paprika and tomato paste and stir everything together.
- Pour in beef broth, kidney beans, crushed tomatoes, tomato puree and elbow macaroni. Bring to a boil then reduce heat to low, cover and simmer for 15-20 minutes until macaroni is tender.
- Turn off heat and add in cheeses, stir until cheese has melted and combined with the mixture.
- Garnish with fresh cilantro if desired and serve hot.
Notes
- For a spicier chili mac, you can add jalapeno peppers or other hot peppers to the recipe.
- When you add the cheese stir cheese, turn stove off and cover until melted so you don't end up with a clumpy sauce.
