How To Make Chili Mac

  • Start by heating some oil in a large pot over medium-high heat. Add ground beef and cook until it is browned.
  • Once the beef is cooked, add onions, green peppers, and garlic. Cook for 3-4 minutes until the vegetables are softened.
  • Stir in chili powder, cumin, paprika, salt and pepper.

  • Pour in beef broth, tomato paste, crushed tomatoes and tomato puree and bring to a boil.
  • Add uncooked macaroni noodles. Cover the pot with a lid and reduce the heat to medium-low.
  • Simmer for 8-10 minutes or until the noodles are tender. Finish off by stirring in cheeses and serve warm!

This chili mac recipe is the ultimate one-pot comfort food. The perfect weeknight dinner for busy nights, this dish only requires one pot and comes together in less than 30 minutes. With easy preparation, minimal ingredients and delicious taste, Chili Macaroni and cheese is sure to become a favorite for the entire family.


  • 8 oz (250g) elbow macaroni
  • 1 pound (450g) ground beef
  • 2 cup (475 ml) beef broth
  • 14 oz can (400g) red kidney beans
  • 1 tbsp olive oil
  • 1 onion
  • 1 green pepper
  • 4 garlic cloves
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tbsp tomato paste
  • 1 cup (210g) crushed tomatoes
  • 1 cup (210g) tomato puree
  • 1 cup (225g) cheddar Cheese
  • 1 cup (225g) mozzarella cheese
  • Fresh cilantro
  • Salt and pepper to taste


  1. In a large skillet over medium-high heat, heat the olive oil, add the ground beef and cook until the meat has browned.
  2. Add the onion, green pepper and garlic to the skillet and cook 2-3 minutes, until vegetables have softened. Add in cumin, chili powder, paprika and tomato paste and stir everything together.
  3. Pour in beef broth, kidney beans, crushed tomatoes, tomato puree and elbow macaroni. Bring to a boil then reduce heat to low, cover and simmer for 15-20 minutes until macaroni is tender.
  4. Turn off heat and add in cheeses, stir until cheese has melted and combined with the mixture.
  5. Garnish with fresh cilantro if desired and serve hot.


  • For a spicier chili mac, you can add jalapeno peppers or other hot peppers to the recipe.
  • When you add the cheese stir cheese, turn stove off and cover until melted so you don't end up with a clumpy sauce.
