  • 2 tablespoons of freshly squeezed lemon juice

  • 1 ½ teaspoons of dried oregano
  • 1 ½ teaspoons of dried basil
  • 1 teaspoon of salt

  • 1 cup of uncooked long-grain white rice
  • 2 cups of water
  • ½ teaspoon of salt

Step-by-Step: How to Make Greek Chicken Bowls

Step 1: Let’s Go Ahead and Prep All Ingredients First

I find it way easier to prep and measure all the ingredients before cooking and have them ready.

  • Thinly slice the red onion.
  • Halve the cherry tomatoes.
  • Dice the cucumber.
  • Finely chop the dill.
  • Zest and juice the lemon.
  • Measure out all marinade and sauce ingredients.

Step 2: Quick Pickle the Red Onions

  1. In a bowl, whisk together ½ cup white vinegar, ½ cup water, 1 tablespoon sugar, and 1 teaspoon salt.
  2. Take the red onion and add them to the bowl, making sure to mix and have all rings coated in the liquid.
  3. Let it rest and move aside while you cook the rest of the meal.

Step 3: Marinate the Chicken

  1. In a bowl mix together the olive oil, lemon juice, lemon zest, honey, garlic powder, oregano, basil, salt and pepper. Make sure to whisk well.
  2. Poke the chicken breast with a fork and add to the marinade bowl making sure to get all areas of the chicken coated.
  3. Let the chicken marinate for at least 30 minutes. NOTE: While the chicken and onions are marinating, go head and start to cook the rice)

Step 4: Cook the Rice

  1. Rinse the rice until the water comes out clear.
  2. In a pan add the 2 cups of water with ½ teaspoon salt and let it come to a boil.
  3. Add the rinsed rice and let it cook on medium heat until the water evaporates, then cover and bring temperature to low heat and cook for 30 minutes.
  4. Remove from heat and then fluff rice. NOTE: While the rice is cooking make the yogurt sauce and cook the chicken)

Step 5: Make the Greek Yogurt Sauce

  1. In a bowl, combine Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, salt, dried oregano, fresh dill, and red wine vinegar.
  2. Stir until smooth and creamy.
  3. Cover and refrigerate until ready to serve.

Step 6: Cook the Chicken

NOTE: You have two options to cook the chicken: Air fryer and/or a skillet. I have tried both and they are equally as easy and delicious. Pick the one that fits the best for you.

Cook in The Air fryer:

  • Preheat the air fryer to 380°F. Add the chicken and cook for 7 minutes, then flip and cook 5 more minutes until internal temperature reaches 165°F.

Cook in a Skillet:

  • Preheat the skillet with a bit of olive oil and cook the chicken over medium heat, 6 minutes per side, until they are golden and fully cooked.

Step 7: Rest and Slice

Put chicken in a plate and let it rest covered for 5 minutes, then slice into strips to keep it moist and juicy.


Step 8: Assemble the Bowls

In bowls start with a layer of rice as the base. Then add tomatoes, cucumber, pickled red onions, feta cheese, sliced chicken, and a generous spoon of Greek yogurt sauce.

  3. Cook the rice: Rinse 1 cup uncooked rice until the water runs mostly clear. Bring 2 cups water and ½ teaspoon salt to a boil. Add rice, stir once, then cover and reduce heat to low. Cook for 15 minutes, then remove from heat and let stand covered for 10 minutes. Fluff with a fork.
  4. Make the Tzatziki Greek yogurt sauce: In a bowl, stir together 1 cup plain Greek yogurt, 1 tablespoon fresh lemon juice, 1 tablespoon olive oil, 1 teaspoon minced garlic, ¼ teaspoon salt, and 1 tablespoon chopped dill until smooth and creamy. Refrigerate until ready to serve.
  5. Cook the chicken (choose one method): Air fryer: Preheat to 380°F. Cook chicken for 7 minutes, flip, then cook 3–5 minutes more until it reaches 165°F. Skillet: Cook over medium heat for 5–7 minutes per side until golden and the internal temperature reaches 165°F.
  6. Rest and slice: Let the chicken rest for 5 minutes, then slice into strips.
  7. Assemble the bowls: Layer rice, romaine lettuce, tomatoes, cucumber, pickled red onions, sliced chicken, and yogurt sauce. Top with ½ cup crumbled feta cheese and serve.
